I prefer to start the eggs in simmering water because it causes the whites to cook before the yolks. But the choice between hot or cold isn’t so much because the eggs cook any better one way or another, but because the timing is more consistent.

Depending on the recipe, the whites are beaten to varying degrees. Much has been said about the advantages of beating egg whites in a copper bowl. It is true that egg whites beaten in clean copper bowls have less of a tendency to break apart when they’re allowed to sit a minute. ) Egg whites beaten in a copper bowl are also more stable, which means that soufflés made with them are less likely to fall. However, if you don’t have a copper bowl, or prefer to use your stand mixer, add a pinch of cream of tartar (or a few drops of lemon juice) to the egg whites before beating.

One common mistake is clarifying butter just before making the hollandaise and then not letting the clarified butter cool enough before adding it to the beaten egg yolks. Keep in mind that hollandaise is a warm sauce, not a hot one.
